NetBeans on Windows. Fedora is just for learning Linux. OS X is for music production.
Most of the tools I use for actually developing my game are built into my engine, but at the moment I use Paint for art since I’m only at a very bare-bones texture stage.

For the people using VisualVM, a while back i found that it affects program performance and doesn’t measure times as accurately as the -Xprof option, which is described here:
