X-Plane looks nice though I am not that much of a hardcore pilot.
I play IL2-Sturmovik though not at hardcore levels.
If you are looking for such ‘real-life’ cockpits you might want to check out the simhq forums.
There are some real geeks out there that rebuild stuff like ww2 fighter plane cockpits.
