So, will the LWJGL 1.0 version be released with win32/linux/macosx binaries ? Or are you going to make alpha versions for macosx because of the lack of development on this plateform during all this time ?

1.0 will be when all platforms are in sync and 100% stable
but we will be releasing builds in between. Probably a 0.93 soon for linux and windows - and starting from 0.95 we might have mac too - just guessing though
