Would the Redbook be suitable, or is it more of a theory book?

The Redbook is great to start with OpenGL : it covers most core features and is an easy read. However it won’t get you into game programming, you’ll need more specific tutorials such as those of NeHe or Gametutorials.

There are some nice tuts about advanced OpenGL features (such vertex and fragment programs, Cg, GLSL,…).
