I typically shoot for 60 as my goal. That usually gives you plenty of room to work with. Of course, any more than that is great too.
60 is good for FPS and racing.
Flightsims e.g. are ok with 30.

hmmm this is suprising to me. I’d think Flightsims would need a lot more than that as there is more precise control required.
I was reading pcworld and noticed that it said the GForce FX 5600 was disappointing in most games (since it was optimized for DX9 and got about 40 fps in non-DX9). Has anyone here tried it out and found otherwise?

But flightsim motion is smooth in contrast to non-physical motion in most FPS. So motion and opponents motion are anticipatable (does that word exist??). And view cannot change that quickly. In Quake, you can turn by 180° in between 2 frames…
This all reduces the needs for framerate.
RTS play well even with 10fps I think.

Can be true. My son now has one. Also the result of older 3Dmarks (2000,2001) are not by far better than on my ancient Geforce2. But this is off-topic?
I too shoot for 60fps but have found you can get away with 30fps for slower machines without it looking too bad. It does depend on the amount of change going on between frames - if you’re not smooth scrolling, and if all your animations are are 10Hz anyway, then 10FPS is enough (but make sure you use a hardware mouse cursor and buffered input to maintain the illusion of a smooth interface).
